How Does Your Garden Grow?

I'm having a difficult time wrapping my head around the fact that this is what our garden looks like without us having to water like crazy...we've experienced a 6 year drought here in the high plains of Texas for those of you who aren't sure why I'm so amazed. Needless to say, I cannot wait to get this produce into the kitchen! Anyone have a tasty recipe for eggplants other than simply grilled or in eggplant parmesan?
